Earth Oven Tilapia, Guacamole

 

 

 

 

Earth oven cooked dish are one of the tastiest delights you will ever experience. On the other hand hygiene and safety need much attention. Always wash your hands and each ingredients you prepare before and after hand manipulation.

Choose a dry and in-land area for clean soil. Make sure the stone are very hot to insure the food reaches a minimum of 65◦c for low pasteurization. Eat while it’s hot!

 

Tilapia: 

Wash carefully the tilapias. Remove the inside parts.

Chop rosemary and ginger. Add to salt and mix with a hint of lemon juice to insure sticky texture.

Place salt on top of banana leaf. Put Tilapia, add salt on top and cover with leaf. Delicately bind leaf with cord. Place in earth oven and cook for no longer than 5 minutes. Remove and reserve. 

 Guacamole:

Chop shallots, add diced tomatoes. Peel, remove seed and add avocado to the veggie mix. Immediately sprinkle lemon juice and mix. Season and reserve.

Earth baked Chapatti: 

Make a whole in the middle of your flour to add water and salt. Mix and prepare the dough. Layer dough like chapatti and cook in earth oven for 10 minutes. The dough should be directly in contact with the hot stones.

 

Serving detail suggestion:

Remove easily the leaf then the bone of the tilapia fish. 

 

Cut pieces of bread and serve to your liking
